The Fermentation Process
The process is performed under controlled conditions, using a carefully selected blend of lactic acid bacteria that:
- converts the sugar into lactic acid, resulting in a product that is 99% sugar-free
- retains antioxidants by removing oxygen during fermenting as well as packaging
- creates shorter, more soluble molecules
